Freezing celery in our stock bag is our usual m.o., but since it was so pungent, I thought celery salt would be a better use of the leaves.
Steps for Amazing Celery Salt
- Use really good celery leaves! It will totally change the flavor. If you don’t have access, use a lot more regular celery leaves.
- The leaves need to be dry. Until the homemade solar dehydrator is created, you can dry them in an oven, out in the sun or even use your car.
- Combine the celery leaves and a good bunch of kosher sea salt in a mortar and pestle or a coffee grinder (get one at a thrift store for cheap for grinding spices and nus).
- Blend it all until everything is incorporated. Store in an airtight jar and voila! Amazing celery salt!
