Garlic Scape Vinegar

I’m sure it’s going to taste delightful, but we have to wait a few more days. Take a clean, sterilized bottle and put 2-4 bruised garlic scapes in it.

Then fill with vinegar – red or white wine or rice vinegar suggested. We used red wine vinegar. Speaking of which, anyone out there have experience making their own vinegar? We’re curious!

Let sit in a dark and cool place for about 2-weeks. Remove scapes and use vinegar!
