Looking for massive protein gains in our vegetarian diet lately, I have been looking at tons of recipes online and pretty pictures on my Pinterest (p.s. feel free to follow me here). What could satisfy my insatiable sweet tooth AND be semi-healthy? Black bean brownies!
There are a ton of these recipes out there and since I had no white sugar left in the house, I went with this one that only uses brown sugar.
Definitely a little weird mixing these up, but the batter smelled really good and definitely gave off a delicious chocolate baking smell throughout the house. When they were done, I sprinkled them with dark chocolate chips and stuck the pan back in the (shut off) oven for a minute until they melted and then spread the chocolate all around.
Verdict: Pretty good! They have an interesting texture and they are not the best brownies I have ever had, but they are tasty, healthy and easy to make. Phil thought some coconut or peanut butter would go well. Maybe for the next batch!
